- 1 pound ground beef (Can substitute with ground turkey or lentils.)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced (Sweet potatoes can be used for a sweeter flavor.)
- 1 can diced tomatoes (14.5 ounces)
- 1 can tomato sauce (8 ounces)
- 1 can kidney beans (15 ounces), rinsed and drained (Can substitute with black beans or pinto beans.)
- 2 cups beef broth (Ensure it’s gluten-free if necessary.)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef along with the chopped onion and minced garlic over medium heat until the meat is fully cooked. Drain any excess fat.
- Transfer the browned beef mixture into your slow cooker.
- Add in the sliced carrots, diced potatoes, diced tomatoes, tomato sauce, kidney beans, beef broth, dried oregano, thyme, salt, and pepper.
- Stir all the ingredients together to ensure they are well combined.
- Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
- Before serving, check the seasoning and adjust if necessary.
