  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced (Sweet potatoes can be used for a sweeter flavor.)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 can kidney beans (15 ounces), rinsed and drained (Can substitute with black beans or pinto beans.)
  • 2 cups beef broth (Ensure it’s gluten-free if necessary.)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef along with the chopped onion and minced garlic over medium heat until the meat is fully cooked. Drain any excess fat.
  2. Transfer the browned beef mixture into your slow cooker.
  3. Add in the sliced carrots, diced potatoes, diced tomatoes, tomato sauce, kidney beans, beef broth, dried oregano, thyme, salt, and pepper.
  4. Stir all the ingredients together to ensure they are well combined.
  5. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
  6. Before serving, check the seasoning and adjust if necessary.
