This Crock Pot Creamy Cajun Chicken Pasta is an easy slow cooker dinner recipe with bold Cajun flavor, juicy shredded chicken, and a rich, creamy sauce.

- 3 chicken breasts
- 2 tablespoons Cajun seasoning
- 3 cloves garlic, minced
- 1 cup diced onion
- 1 cup sliced bell peppers (red and green)
- 2 cups chicken broth
- 1 cup heavy cream
- 4 ounces cream cheese
- 1 cup grated Parmesan cheese
- 12 ounces pasta (penne or rotini), cooked
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crock pot and season with Cajun seasoning.
- Add minced garlic, diced onion, and bell peppers on top of the chicken.
- Pour in chicken broth and heavy cream, stirring gently to combine.
- Cover and cook on low for 4 to 6 hours, until chicken is tender and cooked through.
- Shred the chicken in the crock pot using two forks.
- Add cream cheese and Parmesan cheese, stirring until melted and smooth.
- Cook pasta separately according to package instructions, drain and stir into the crock pot mixture.
- Mix well to coat pasta in the creamy Cajun sauce.
- Taste and adjust seasoning with additional salt or pepper if needed.
- Serve hot with optional garnish of parsley or extra cheese.
