Ingredients

  • 3 chicken breasts
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup diced onion
  • 1 cup sliced bell peppers (red and green)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese
  • 1 cup grated Parmesan cheese
  • 12 ounces pasta (penne or rotini), cooked
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the crock pot and season with Cajun seasoning.
  2. Add minced garlic, diced onion, and bell peppers on top of the chicken.
  3. Pour in chicken broth and heavy cream, stirring gently to combine.
  4. Cover and cook on low for 4 to 6 hours, until chicken is tender and cooked through.
  5. Shred the chicken in the crock pot using two forks.
  6. Add cream cheese and Parmesan cheese, stirring until melted and smooth.
  7. Cook pasta separately according to package instructions, drain and stir into the crock pot mixture.
  8. Mix well to coat pasta in the creamy Cajun sauce.
  9. Taste and adjust seasoning with additional salt or pepper if needed.
  10. Serve hot with optional garnish of parsley or extra cheese.
