Description

Tender chicken breasts slow-cooked in a creamy Italian-inspired sauce served over angel hair pasta for an easy, comforting dinner perfect for busy weeknights.


Ingredients

  • 1 tbsp vegetable oil (12 tablespoons for searing)
  • salt and pepper (to taste)
  • 1.5 lbs boneless skinless chicken breasts (about 2 large breasts, 68 oz each, similar in size)
  • 4 oz cream cheese (half of an 8 oz package, softened to room temperature for 3045 minutes)
  • 3 tbsp unsalted butter (softened to room temperature for 3045 minutes)
  • 10.5 oz cream of chicken soup (1 can, recommend low or no sodium)
  • 3 cloves garlic (minced)
  • 3/4 cup chicken broth (recommend low or no sodium)
  • 1 packet Good Seasons Dry Italian Salad Dressing Mix (0.7 oz packet)
  • 16 oz angel hair pasta (1 box)
  • fresh parsley, cracked pepper, or Parmesan cheese (optional for serving)

Instructions

  1. Heat cast iron skillet over medium-high heat with 1-2 tablespoons vegetable oil. Season both sides of chicken breasts with salt and pepper. Once pan is hot, sear chicken for 2-3 minutes per side until golden brown. Remove from heat.
  2. In a medium bowl, whisk softened cream cheese and butter together until completely smooth with no lumps remaining (about 1 minute of vigorous whisking).
  3. Add cream of chicken soup, minced garlic, chicken broth, and Italian dressing mix to the bowl. Whisk thoroughly until fully combined and uniform.
  4. Spray a 4-6 quart crock pot with non-stick cooking spray. Place seared chicken breasts in the bottom. Pour sauce mixture evenly over chicken, coating completely.
  5. Cover and cook on low for 3-4 hours until chicken reaches internal temperature of 165°F. Do not cook on high. If chicken wasn’t seared, cook for 5-6 hours on low.
  6. About 15 minutes before serving, cook angel hair pasta according to package directions until al dente (typically 3-4 minutes). Drain well.
  7. Serve chicken and sauce over pasta, or toss pasta directly in sauce for maximum flavor. Garnish with fresh parsley, cracked pepper, or Parmesan cheese if desired.
