These Crispy Zucchini Roll-Ups are light, herby, and packed with creamy cheese inside tender grilled zucchini slices. Perfect for appetizers, party snacks, or a fresh low-carb side dish.

- 2 medium zucchinis, thinly sliced lengthwise
- 4 oz cream cheese, softened
- 1/4 cup crumbled feta cheese
- 1 clove garlic, minced
- 2 tablespoons chopped fresh herbs (parsley, basil, oregano)
- 1/4 teaspoon red pepper flakes
- 1 teaspoon lemon zest (optional)
- Salt and black pepper, to taste
- Olive oil, for brushing and grilling
Instructions
- Slice zucchini lengthwise into thin strips using a mandoline or sharp knife.
- Lay slices on a paper towel, sprinkle lightly with salt, and let sit 10 minutes to draw out moisture. Pat dry.
- Brush both sides of zucchini with olive oil. Grill or pan-sear for 1–2 minutes per side until softened and lightly charred. Set aside to cool slightly.
- In a bowl, mix cream cheese, feta, garlic, herbs, lemon zest, red pepper flakes, salt, and pepper until smooth.
- Spread a small amount of filling on each zucchini strip and roll tightly.
- Optional: Return roll-ups to skillet to crisp the bottom and edges before serving.
- Serve warm or at room temperature with a drizzle of olive oil or extra herbs.
