- 750g / 1.5 lb baby potatoes, halved
- 2 tbsp olive oil, plus more for drizzling
- 1/2 cup / 50g grated parmesan (the sand-like type)
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano or thyme
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/2 tsp black pepper
- 3/4 cup sour cream (optional)
- 1/4 cup finely chopped green onions (optional, for garnish)
Instructions
- Preheat your oven to 200°C (400°F) and prepare a glass baking dish by drizzling olive oil in the bottom.
- In a bowl, combine grated parmesan, garlic powder, oregano, paprika, salt, and black pepper.
- Arrange halved baby potatoes in the prepared baking dish, cut side down. Press them gently into the oil.
- Sprinkle the parmesan mixture evenly over the potatoes, ensuring good coverage.
- Drizzle a little extra olive oil over the potatoes and optionally sprinkle with salt.
- Bake in the oven for 35-40 minutes until the potatoes are tender and the parmesan crust is golden and crispy.
- Allow the potatoes to rest for 5 minutes before serving. Flip them so the cheese side is up and serve with sour cream or a dip of your choice.
