  • 750g / 1.5 lb baby potatoes, halved
  • 2 tbsp olive oil, plus more for drizzling
  • 1/2 cup / 50g grated parmesan (the sand-like type)
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano or thyme
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 3/4 cup sour cream (optional)
  • 1/4 cup finely chopped green onions (optional, for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F) and prepare a glass baking dish by drizzling olive oil in the bottom.
  2. In a bowl, combine grated parmesan, garlic powder, oregano, paprika, salt, and black pepper.
  3. Arrange halved baby potatoes in the prepared baking dish, cut side down. Press them gently into the oil.
  4. Sprinkle the parmesan mixture evenly over the potatoes, ensuring good coverage.
  5. Drizzle a little extra olive oil over the potatoes and optionally sprinkle with salt.
  6. Bake in the oven for 35-40 minutes until the potatoes are tender and the parmesan crust is golden and crispy.
  7. Allow the potatoes to rest for 5 minutes before serving. Flip them so the cheese side is up and serve with sour cream or a dip of your choice.
