Ingredients

  • 1/2 tsp black pepper
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, chopped
  • 2 tbsp sour cream
  • 1 tbsp chopped chives

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut potatoes into 1-inch cubes, leaving the skin on.
  3. Toss potato cubes with olive oil, salt, and pepper.
  4. Spread on a baking sheet and bake for 25-30 minutes until crispy.
  5. Sprinkle cheese and bacon over the potatoes.
  6. Return to oven for 2-3 minutes until cheese melts.
  7. Garnish with sour cream and chives.
  8. Serve warm.
