Ingredients

- 6 hard-boiled eggs, chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup celery, diced
- 1/4 cup green onions, sliced
- Salt to taste
- Pepper to taste
- 1/2 cup potato chips, crushed
Instructions
- Chop the hard-boiled eggs and place them in a bowl.
- Add mayonnaise and Dijon mustard, mix well.
- Stir in diced celery and sliced green onions.
- Season with salt and pepper.
- Gently fold in crushed potato chips for crunch.
- Serve on bread or lettuce as desired.
