  5. Roll out risen dough into a square, place butter block in the center, and fold corners over butter.
  6. Roll out dough into a rectangle and fold like a letter; chill for 30 minutes.
  7. Repeat the rolling and folding process two more times with chilling in between.
  8. Roll final dough out to cut triangles; shape into croissants and proof for one hour.
  9. Brush with beaten egg and bake at 400°F (200°C) for 15-18 minutes until golden brown.
