- 1 cup panko breadcrumbs
- 2 tbsp olive oil

Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Drain and press the tofu for about 15 minutes to remove excess moisture, then cut it into finger-sized strips.
- In a bowl, whisk together honey, Dijon mustard, garlic powder, salt, and pepper to create the glaze.
- Dip each tofu strip into the glaze, then coat with panko breadcrumbs.
- Arrange the coated tofu on the baking sheet and drizzle with olive oil.
- Bake for 25-30 minutes until golden brown, flipping halfway through for even crispness.
