- 8–10 flour tortillas
- 3 cups cooked shredded chicken
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- ½ cup diced green chiles
- ¼ cup chopped fresh cilantro
- 1 small onion, diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup sour cream
- ½ teaspoon ground cumin
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C), grease 9×13 baking dish.
- In saucepan, melt butter over medium heat. Whisk in flour, cook 1 minute.
- Gradually whisk in chicken broth, cook until thickened. Remove from heat, stir in sour cream, cumin, salt, pepper.
- In bowl, combine shredded chicken, onion, green chiles, cilantro, 1 cup cheese.
- Spread thin layer of white sauce in bottom of baking dish.
- Fill tortillas with chicken mixture, roll tightly, place seam-side down in dish.
- Pour remaining sauce over enchiladas, top with remaining cheeses.
- Bake 25–30 minutes until bubbly, golden.
- Let rest few minutes before serving.
