Creamy White Chicken Enchiladas deliver ultimate comfort—filled with shredded chicken, melty cheese, smothered in homemade white sauce.


Ingredients

  • 810 flour tortillas
  • 3 cups cooked shredded chicken
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • ½ cup diced green chiles
  • ¼ cup chopped fresh cilantro
  • 1 small onion, diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • ½ teaspoon ground cumin
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C), grease 9×13 baking dish.
  2. In saucepan, melt butter over medium heat. Whisk in flour, cook 1 minute.
  3. Gradually whisk in chicken broth, cook until thickened. Remove from heat, stir in sour cream, cumin, salt, pepper.
  4. In bowl, combine shredded chicken, onion, green chiles, cilantro, 1 cup cheese.
  5. Spread thin layer of white sauce in bottom of baking dish.
  6. Fill tortillas with chicken mixture, roll tightly, place seam-side down in dish.
  7. Pour remaining sauce over enchiladas, top with remaining cheeses.
  8. Bake 25–30 minutes until bubbly, golden.
  9. Let rest few minutes before serving.
