- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 (9 oz) package cheese tortellini
- 4 cups fresh spinach, roughly chopped
- 1 cup heavy cream
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional minute, until fragrant.
- Pour in the broth and bring to a simmer. Add the tortellini and cook for 5-7 minutes, until the tortellini is tender.
- Stir in the fresh spinach and heavy cream. Simmer for 2-3 minutes, until the spinach is wilted.
- Season with dried basil, dried thyme, red pepper flakes (if using), salt, and pepper.
- Serve the creamy tortellini and spinach soup hot, with crusty bread on the side.
