Creamy Taco Tater Tot Casserole is a cheesy, bold dish that is family-friendly.

- 1 lb lean ground beef or turkey (90/10 recommended)
- 1 packet taco seasoning (or 2 tbsp homemade mix)
- 1 small onion, diced
- 1 can (10 oz) diced tomatoes with green chiles, drained
- ½ cup sour cream or plain Greek yogurt
- 1 cup shredded cheddar cheese
- 1 bag (28 oz) frozen tater tots
- Optional garnishes: sliced green onions, jalapeños, chopped cilantro
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray.
- In a large skillet over medium heat, cook ground beef and diced onion together, breaking up the meat until browned and the onion is translucent. Drain excess fat.
- Stir in taco seasoning and drained diced tomatoes with green chiles. Cook 2–3 minutes to combine flavors.
- Remove skillet from heat. Stir in sour cream (or Greek yogurt) and half of the shredded cheddar until creamy and well blended.
- Spread beef mixture evenly in the prepared baking dish. Arrange frozen tater tots on top in neat rows. Sprinkle remaining cheddar cheese evenly over tots.
- Bake uncovered for 30–35 minutes, until tater tots are golden and cheese is melted and bubbly. Optional: broil for 1–2 minutes for extra golden top—watch closely!
- Let casserole rest 5 minutes before serving. Garnish with green onions, jalapeños, or cilantro as desired.
