- 8 oz cream cheese, softened
- 1 cup heavy whipping cream, cold
- 1/2 cup powdered sugar, sifted
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- 1 1/2 cups graham crackers, crushed
- 1 tablespoon fresh lemon juice
Instructions
- Prepare the graham cracker crust: Place 1 1/2 cups (150g) of graham crackers in a food processor and pulse until finely crushed. If you don’t have a processor, place them in a plastic bag and crush with a rolling pin. Set aside.
- Slice the strawberries: Wash and hull 2 cups (300g) fresh strawberries, then slice them evenly. Reserve a few whole berries for garnish if you like.
- Make the cheesecake filling: In a large bowl, beat 8 oz (225g) softened cream cheese with 1/2 cup (60g) powdered sugar and 1 teaspoon vanilla extract until smooth and creamy, about 2-3 minutes with an electric mixer.
- Whip the cream: In a separate chilled bowl, whip 1 cup (240ml) heavy whipping cream until soft peaks form. Be careful not to overwhip.
- Fold whipped cream into cream cheese: Gently fold the whipped cream into the cream cheese mixture using a spatula, keeping as much air as possible for a light, fluffy texture.
- Layer the parfaits: In your glasses or jars, start with a spoonful of graham cracker crumbs, then a layer of the creamy filling, followed by sliced strawberries. Repeat layers until glasses are nearly full—usually 2-3 layers depending on glass size.
- Chill and serve: Refrigerate the parfaits for at least 2 hours to let flavors meld and the filling firm up. Garnish with reserved strawberries just before serving.
