- 1 cup fresh spinach (chopped, or 1/2 cup frozen spinach, thawed and drained)
- 1/2 cup breadcrumbs (whole wheat or regular)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, grated Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Shape the mixture into meatballs, about 1-1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.
- In a large skillet over medium heat, add a bit of olive oil if needed and sauté the minced garlic for about 1 minute until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Add the grated Parmesan cheese, Italian seasoning, salt, and pepper. Stir until the cheese has melted and the sauce is smooth.
- Once the meatballs are baked, transfer them to the skillet with the creamy sauce. Gently stir to coat the meatballs in the sauce. Let them simmer for a few minutes to absorb the flavors.
- Serve the creamy spinach turkey meatballs over pasta, rice, or on their own. Garnish with fresh parsley if desired.
