Description

Creamy Spinach Turkey Meatballs Recipe

Ingredients

Scale
  • 1 lb ground turkey
  • 1 cup fresh spinach (chopped, or 1/2 cup frozen spinach, thawed and drained)
  • 1/2 cup breadcrumbs (whole wheat or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for cooking)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, grated Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs, about 1-1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.
  5. In a large skillet over medium heat, add a bit of olive oil if needed and sauté the minced garlic for about 1 minute until fragrant.
  6. Pour in the heavy cream and chicken broth, stirring to combine.
  7. Add the grated Parmesan cheese, Italian seasoning, salt, and pepper. Stir until the cheese has melted and the sauce is smooth.
  8. Once the meatballs are baked, transfer them to the skillet with the creamy sauce. Gently stir to coat the meatballs in the sauce. Let them simmer for a few minutes to absorb the flavors.
  9. Serve the creamy spinach turkey meatballs over pasta, rice, or on their own. Garnish with fresh parsley if desired.
  10. Enjoy this delicious and creamy dish!
