Ingredients

- 2 lbs ripe tomatoes (halved)
- 1 bulb garlic (top sliced off)
- 1 small onion (sliced)
- 3 tbsp olive oil
- 2 cups vegetable broth
- 0.5 cup heavy cream
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp dried oregano
Instructions
- Roast tomatoes, onion, and garlic at 400°F for 35–40 minutes.
- Blend roasted vegetables with broth until smooth.
- Transfer to pot and stir in cream.
- Simmer 5–10 minutes and adjust seasoning.
- Garnish and serve warm.
