- 1 cup Mascarpone cheese

- 1/2 cup Grated Parmesan cheese
Instructions
- Gather Ingredients: Start by prepping all your ingredients.
- Preheat Oven: Set your oven to 400°F.
- Roast Garlic: Cut the tops off each head of garlic, drizzle with olive oil, sprinkle with salt and pepper, wrap in foil and roast for 45 to 50 minutes.
- Prepare Garlic Paste: Once cool, unwrap the garlic, squeeze the cloves into a bowl and mash into a paste.
- Melt Butter: In a pan over medium-low heat, melt the unsalted butter.
- Combine Pumpkin and Garlic: Add pumpkin puree and roasted garlic paste to the pan and stir.
- Season the Sauce: Stir in chicken base, Italian seasoning, salt, and black pepper.
- Add Mascarpone: Fold in the mascarpone cheese until melted into the puree.
- Combine Half and Half: Pour in half and half and stir to blend.
- Finish with Parmesan: Turn off heat and stir in grated Parmesan cheese, adjust seasoning if needed.
- Serve or Store: Use the sauce immediately or cool down and store in the fridge.
