Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté for about 5 minutes until soft and translucent.
  3. Add diced potatoes and vegetable broth. Bring to a boil.
  4. Reduce heat to a simmer, cover, and cook for about 15 minutes, or until potatoes are fork-tender.
  5. Use an immersion blender to blend about half of the soup until smooth. Alternatively, carefully transfer half the soup to a regular blender and blend in batches.
  6. Stir in the heavy cream.
  7. Season with salt and pepper to taste.
  8. Heat through for about 2 minutes, but do not boil.
  9. Let the soup rest for 5 minutes before serving.

Notes

  • For a thicker soup, blend more of the potatoes.
  • If the soup is too thin, blend a few more cooked potatoes and stir them in.
  • If the soup is too thick, add a splash of broth or cream to reach your desired consistency.
  • Taste and adjust seasoning after adding the cream.
