- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 1 14.5-ounce can diced tomatoes

- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 8 ounces short pasta (penne or rotini)
- 1/2 cup heavy cream
- 1 cup freshly grated Parmesan cheese

Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the Italian sausage and cook until browned, breaking it up with a spoon.
- Remove the sausage from the pot and set aside.
- In the same pot, sauté the diced onion until translucent.
- Add minced garlic and sauté for an additional minute until fragrant.
- Stir in chicken broth, water, diced tomatoes (with liquid), dried basil, dried oregano, and red pepper flakes. Bring to a boil.
- Once boiling, return cooked sausage and add the pasta. Reduce heat and let it simmer until pasta is al dente, about 10 minutes.
- Gently stir in heavy cream and grated Parmesan cheese until cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with freshly chopped parsley.
