Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 14.5-ounce can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 8 ounces short pasta (penne or rotini)
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese

  • for garnish Fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the Italian sausage and cook until browned, breaking it up with a spoon.
  3. Remove the sausage from the pot and set aside.
  4. In the same pot, sauté the diced onion until translucent.
  5. Add minced garlic and sauté for an additional minute until fragrant.
  6. Stir in chicken broth, water, diced tomatoes (with liquid), dried basil, dried oregano, and red pepper flakes. Bring to a boil.
  7. Once boiling, return cooked sausage and add the pasta. Reduce heat and let it simmer until pasta is al dente, about 10 minutes.
  8. Gently stir in heavy cream and grated Parmesan cheese until cheese is melted and the soup is creamy.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with freshly chopped parsley.
