- 2 large chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup Italian-style breadcrumbs
- 2 large eggs
- 1/2 cup all-purpose flour
- 3 tablespoons butter
- 4 cloves garlic minced
- 3/4 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Dredge each breast in flour, then dip into beaten eggs, then coat in a mixture of Parmesan and breadcrumbs.
- Heat 1 tablespoon butter with olive oil in a skillet over medium heat.
- Fry chicken for about 4–5 minutes on each side until golden and cooked through. Remove and set aside.
- In the same skillet, add remaining butter and garlic. Cook for 1 minute until fragrant.
- Stir in chicken broth and bring to a simmer.
- Reduce heat and add heavy cream. Let it simmer and thicken for 3–4 minutes.
- Return the chicken to the skillet and spoon the sauce over the top. Simmer for 2 minutes and serve hot.
