Creamy One-Pot Roast Chicken is a comforting family favorite that combines rich flavors and minimal cleanup.


Ingredients

  • 1 whole Chicken
  • 100 grams Spreadable Butter
  • 4 cloves Garlic
  • 2 teaspoons Thyme
  • 2 teaspoons Mustard Powder
  • 250 ml Cream
  • 1 medium Leek
  • 500 grams Potatoes
  • 2 tablespoons Brown Sugar
  • 500 ml Chicken Stock
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Fresh Parsley

Instructions

  1. Preheat the oven to 200°C (180°C fan forced).
  2. Arrange the leeks in a round flame-proof baking dish and place the chicken breast side up.
  3. Mix together spreadable butter, thyme, garlic, and lemon zest in a small bowl. Spread this mixture over the chicken, seasoning generously with salt and pepper.
  4. Roast the chicken for 30 minutes, or until it starts to brown.
  5. Combine cream, chicken stock, mustard, and brown sugar in a jug; whisk until well blended. Add in your potatoes and pour the creamy mixture over everything.
  6. Continue roasting for an additional 45 minutes, or until the chicken is golden and juices run clear. Check that the internal temperature reaches at least 75°C.
  7. Carve the chicken, serve with the tender potatoes and rich sauce, garnished with fresh parsley and thyme.
