This creamy one-pot hamburger stroganoff is a quick and comforting weeknight meal. It’s packed with flavor and easy to prepare in just one pot.

- 1 lb ground beef
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 8 oz mushrooms (sliced)
- 1 tsp paprika
- 1 tsp Worcestershire sauce
- 4 cups beef broth
- 1 cup uncooked egg noodles
- 1 cup sour cream
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley (chopped for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 3-4 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Increase heat to medium-high and add ground beef, cooking until browned, about 5-7 minutes.
- Stir in sliced mushrooms, paprika, and Worcestershire sauce, cooking for another 3-4 minutes.
- Pour in beef broth and bring to a boil, then add uncooked egg noodles.
- Stir well, reduce heat to a simmer, and cover, cooking for about 10-12 minutes until noodles are tender.
- Remove from heat and stir in sour cream until creamy and well combined.
- Season with salt and pepper to taste and serve hot, garnished with chopped parsley.
