- 2 Tbsp. Olive oil (divided)
- 1.5 lbs. Boneless, skinless chicken thighs
- Salt and pepper (to taste)
- 1/2 large Yellow onion (diced)
- 2 cloves Garlic (minced)
- 1 lb. White potatoes (cut into a large dice)
- 8 oz. Baby portobello mushrooms (halved)
- 2 sprigs Fresh rosemary (leaves removed and roughly chopped)
- 1 cup Chicken stock
- 1/4 cup Heavy cream
- 1 Tbsp. Cornstarch
- 2 cups Fresh spinach (roughly chopped)
- 2/3 cup Shredded parmesan cheese
Instructions
- Preheat the oven to 400°F. Prepare your oven-safe pan by heating half of the olive oil over medium-high heat until shimmering.
- Season the chicken thighs generously with salt and pepper. Once the oil is hot, add the thighs to the skillet and sear them for 2-3 minutes per side until they’re beautifully browned. Remove them to a plate to rest.
- Sauté the onion and garlic in the remaining olive oil for 2-3 minutes until the onion softens and becomes translucent.
- Combine the diced potatoes with the onion-garlic mixture, stirring everything together. Cook for another 2-3 minutes until the potatoes begin to soften.
- Add the mushrooms and cook for an additional 2-3 minutes until they become tender and release their juices. Stir in the chopped rosemary along with a pinch of salt and pepper.
- Pour in the chicken stock gradually while stirring to scrape up any browned bits from the bottom of the pan.
- Mix in the heavy cream, stirring well to combine all the ingredients into a rich, creamy sauce that smells irresistible.
- Nestle the seared chicken back into the skillet, ensuring each piece is submerged in the sauce. Transfer the skillet to the oven and bake for 15-20 minutes until the chicken and potatoes are fully cooked.
- Whisk together 2-3 tablespoons of the sauce with cornstarch in a small bowl. This will help create a silky texture for your final dish.
- Stir the cornstarch slurry back into the skillet slowly, mixing until the sauce thickens to a velvety consistency.
- Fold in the fresh spinach and shredded parmesan cheese. Stir until the cheese is melted and beautifully incorporated.
