  • 2 Tbsp. Olive oil (divided)
  • 1.5 lbs. Boneless, skinless chicken thighs
  • Salt and pepper (to taste)
  • 1/2 large Yellow onion (diced)
  • 2 cloves Garlic (minced)
  • 1 lb. White potatoes (cut into a large dice)
  • 8 oz. Baby portobello mushrooms (halved)
  • 2 sprigs Fresh rosemary (leaves removed and roughly chopped)
  • 1 cup Chicken stock
  • 1/4 cup Heavy cream
  • 1 Tbsp. Cornstarch
  • 2 cups Fresh spinach (roughly chopped)
  • 2/3 cup Shredded parmesan cheese

Instructions

  1. Preheat the oven to 400°F. Prepare your oven-safe pan by heating half of the olive oil over medium-high heat until shimmering.
  2. Season the chicken thighs generously with salt and pepper. Once the oil is hot, add the thighs to the skillet and sear them for 2-3 minutes per side until they’re beautifully browned. Remove them to a plate to rest.
  3. Sauté the onion and garlic in the remaining olive oil for 2-3 minutes until the onion softens and becomes translucent.
  4. Combine the diced potatoes with the onion-garlic mixture, stirring everything together. Cook for another 2-3 minutes until the potatoes begin to soften.
  5. Add the mushrooms and cook for an additional 2-3 minutes until they become tender and release their juices. Stir in the chopped rosemary along with a pinch of salt and pepper.
  6. Pour in the chicken stock gradually while stirring to scrape up any browned bits from the bottom of the pan.
  7. Mix in the heavy cream, stirring well to combine all the ingredients into a rich, creamy sauce that smells irresistible.
  8. Nestle the seared chicken back into the skillet, ensuring each piece is submerged in the sauce. Transfer the skillet to the oven and bake for 15-20 minutes until the chicken and potatoes are fully cooked.
  9. Whisk together 2-3 tablespoons of the sauce with cornstarch in a small bowl. This will help create a silky texture for your final dish.
  10. Stir the cornstarch slurry back into the skillet slowly, mixing until the sauce thickens to a velvety consistency.
  11. Fold in the fresh spinach and shredded parmesan cheese. Stir until the cheese is melted and beautifully incorporated.
