An easy and creamy Tuscan-inspired chicken soup packed with flavor, pasta, and sun-dried tomatoes.
Ingredients

- 1 teaspoon olive oil
- 1 1/2 pounds boneless, skinless chicken breasts or thighs, diced into 1-inch pieces
- 2 teaspoons Italian seasoning, divided
- Salt and freshly ground black pepper to taste
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup diced yellow onion
- 1/4 cup oil-packed sun-dried tomatoes, drained and roughly chopped
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 tablespoons tomato paste (optional)
- 6 to 8 cups chicken broth
- 6 ounces dried pasta (such as small shells, penne, or rotini)
- 1 cup heavy whipping cream
- 1/2 to 1 cup grated Parmesan Reggiano cheese, plus more for serving
Instructions
- Season diced chicken with salt, pepper, and 1 teaspoon of Italian seasoning. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken in batches until browned, about 3-4 minutes per side, then set aside.
- Add diced carrots, celery, and onion to the same pot and sauté until softened, about 5-7 minutes. Stir in sun-dried tomatoes and minced garlic, cooking for another 1-2 minutes until fragrant.
- Sprinkle flour over vegetables and stir to coat. Cook for 1-2 minutes to toast. If using tomato paste, stir it in and cook for another minute. Gradually whisk in 6 cups of chicken broth, scraping up browned bits from the bottom of the pot. Bring to a simmer.
- Stir in dried pasta, ensuring it’s submerged. Add more chicken broth if needed to reach desired consistency. Return seared chicken and any accumulated juices to the pot. Simmer uncovered for 10-15 minutes, or until pasta is al dente and chicken is cooked through, stirring occasionally.
- Reduce heat to low. Slowly pour in heavy whipping cream, stirring gently to incorporate. Heat through without boiling. Stir in the remaining 1 teaspoon of Italian seasoning and grated Parmesan cheese until melted and smooth. Taste and adjust seasoning with salt and pepper as needed.
