- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 2 (4-ounce) cans diced green chiles
- 3 cups shredded cooked chicken
- 2 (15-ounce) cans cannellini or Great Northern beans, drained
- 3 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 4 ounces cream cheese, softened
- 1 cup half and half
- 1 tablespoon lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add green chiles, cumin, oregano, and chili powder. Stir and cook for 1 minute to bloom the spices.
- Add shredded chicken, drained beans, and chicken broth. Stir to combine. Bring to a gentle simmer and cook uncovered for 15 minutes.
- Reduce heat to low. Stir in cream cheese and allow it to melt fully.
- Pour in half and half, stirring until the mixture is smooth and creamy. Simmer for another 5 minutes, making sure it doesn’t boil.
- Stir in lime juice and chopped cilantro. Season with salt and pepper to taste.
- Serve hot with desired toppings such as avocado, shredded cheese, tortilla chips, or sour cream.
