Description

This creamy corn casserole features a rich, custardy base of sweet corn and sour cream, topped with a golden, buttery, crispy cracker crust. It’s a nostalgic comfort food side dish that’s quick to prepare and always a crowd-pleaser for holidays, potlucks, or weeknight dinners.

Ingredients

Scale
  • 1 (15 oz) can cream-style corn
  • 1 (15 oz) can whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, at room temperature
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed buttery crackers (such as Ritz or Club)
  • 2 tablespoons unsalted butter, melted (for topping)
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Grease an 8×8 inch or 9×13 inch baking dish with butter or nonstick spray. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together sour cream and eggs until smooth. Add melted butter and whisk again.
  3. Stir in cream-style corn and drained whole kernel corn until well combined.
  4. Add flour, sugar (if using), salt, and black pepper. Stir gently until just mixed.
  5. Scrape the mixture into the prepared baking dish and smooth the top with a spatula.
  6. In a small bowl, combine crushed buttery crackers with melted butter. Stir in shredded cheddar cheese if using.
  7. Sprinkle the topping evenly over the casserole.
  8. Bake on the middle rack for 35–40 minutes, until bubbling at the edges and the top is golden brown. Tent with foil if the top browns too quickly.
  9. Optional: Broil for 1–2 minutes at the end for extra crispiness, watching closely.
  10. Let casserole rest for 10–15 minutes before serving to set and make scooping easier.
