- 1 can (14.75 oz) cream-style corn
- 1 cup sour cream (full-fat preferred)

- 2 large eggs, room temperature

- 1/2 cup milk (whole or 2%)
- 1 tsp kosher salt
- 1/2 tsp ground black pepper

- 2 tbsp fresh parsley, chopped

Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch or 9×13-inch baking dish with butter or nonstick spray.
- In a large bowl, whisk together eggs, milk, and sour cream until smooth and slightly frothy.
- Add drained whole kernel corn and cream-style corn to the bowl. Stir gently to combine.
- Sprinkle in flour, salt, black pepper, and smoked paprika (if using). Fold gently with a spatula.
- Drizzle in 1/2 cup melted butter and stir until just combined. If batter is too dense, add a splash more milk.
- Fold in optional mix-ins: cheddar cheese, roasted red pepper, or jalapeño, if desired.
- Pour mixture into prepared baking dish and smooth the top.
- In a small bowl, combine panko breadcrumbs, 1/3 cup melted butter, parsley, chives, thyme, and a pinch of flaky salt. Mix until crumbs are evenly coated.
- Sprinkle buttery herb topping over casserole and press gently for even coverage.
- Bake uncovered for 40-45 minutes, until topping is golden brown and center is set (knife inserted should come out mostly clean).
- Let casserole rest for 10 minutes before serving to allow center to firm up.
