- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 slices thick-cut bacon
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups fresh spinach (optional)
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, cook diced bacon until crispy. Remove and set aside.
- In the same skillet, add cubed chicken breasts; season with salt and pepper. Cook until golden brown (6-8 minutes).
- Stir in minced garlic and cook for about 1 minute, then add fresh spinach until wilted.
- Pour in heavy cream, bring to a simmer, then stir in Parmesan cheese until melted.
- Add cooked pasta and reserved bacon to the sauce; toss until well coated. If needed, add pasta water for creaminess.
- Serve hot with extra Parmesan on top.
