- 1.5 pounds boneless, skinless chicken thighs
- 4 medium russet potatoes, peeled and diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- In a skillet, heat olive oil over medium-high heat. Sauté the chicken thighs for 6-7 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, add diced potatoes and chopped onion; sauté for about 8-10 minutes until softened. Stir in minced garlic for another minute.
- Pour in chicken broth and heavy cream; simmer and stir in thyme and paprika for 5-7 minutes until thickened.
- Return chicken to the skillet, sprinkle with cheddar and mozzarella cheese, cover, and cook for an additional 5-10 minutes until cheese is melted.
- Garnish with fresh parsley before serving.
