  • 1 head of cauliflower (or 1 bag of frozen cauliflower rice)
  • 2 cups fresh broccoli florets (or frozen)
  • 1 lb lean ground beef
  • 8 oz cream cheese, softened
  • 1/2 cup milk (dairy or non-dairy)
  • 2 cloves minced garlic
  • 1 tsp onion powder
  • 1 tsp dry mustard powder
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 2 cups sharp cheddar cheese, grated
  • 1 cup Monterey Jack cheese, grated (optional)
  • 1/2 cup unsalted beef broth (optional)
  • 1/4 tsp smoked paprika (optional)
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground beef over medium-high heat until browned and no longer pink. Drain excess fat.
  3. If using fresh cauliflower, sauté it in a separate pan for about 5-7 minutes until tender-crisp. If using frozen, steam or microwave it according to package directions, then sauté briefly.
  4. Steam or blanch the broccoli florets for 3-5 minutes until bright green and tender-crisp.
  5. In a large bowl, combine the softened cream cheese with the milk (or broth), minced garlic, onion powder, dry mustard, salt, and black pepper. Whisk until smooth and creamy.
  6. Add the cooked ground beef, sautéed cauliflower rice, and tender-crisp broccoli to the creamy sauce. Stir in about two-thirds of the grated cheese until everything is thoroughly combined.
  7. Transfer the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining cheese over the top.
  8. Bake for 25-30 minutes until bubbly around the edges and the cheese on top is melted and golden brown.
  9. Let the casserole rest for about 5-10 minutes before serving.
