Description

A warm, hearty soup blending rich flavors of corn, shrimp, and bacon, seasoned with Cajun spices for a comforting bisque perfect for family dinners or gatherings.


Ingredients

  • 4 strips bacon, chopped (Cooked until crispy)
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 large russet potato, peeled and diced
  • 3 cups corn kernels, fresh or frozen, divided (Reserve some for later)
  • 1 tablespoon tomato paste
  • 2 teaspoons Cajun seasoning, divided
  • 4 cups shrimp stock (Can use homemade or store-bought)
  • 1 pound shrimp, peeled and deveined
  • ¾ teaspoon kosher salt (Season to taste)
  • 1 tablespoon olive oil (For sautéing shrimp)
  • 1 cup heavy cream
  • ½ cup fresh parsley, minced (For garnish)
  • 1 large lemon, zested and juiced

Instructions

  1. In a large soup pot, cook the chopped bacon over medium heat until crispy. Remove and drain the bacon on paper towels.
  2. In the same pot, sauté the chopped onion until translucent, then add minced garlic and cook for another minute.
  3. Add diced potato and 1 cup corn kernels, sauté for 2-3 minutes.
  4. Stir in tomato paste and half the Cajun seasoning, coating the vegetables well.
  5. Pour in shrimp stock, bring to a boil, then simmer for 15-20 minutes until potatoes are fork-tender.
  6. Season shrimp with remaining salt and Cajun seasoning. Cook in olive oil over medium-high heat for 2 minutes per side, then remove from heat.
  7. Blend the soup until smooth using a blender or immersion blender.
  8. Stir in shrimp and remaining corn, cooking until shrimp are fully cooked.
  9. Mix in heavy cream, cooked bacon, lemon zest, lemon juice, and fresh parsley. Season with salt and pepper to taste.
