  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Toss the chicken pieces with Cajun seasoning, ensuring they are well-coated.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes. Add garlic and cook for an additional minute until fragrant.
  5. Stir in the rice and cook for 1-2 minutes, allowing it to toast slightly.
