- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Toss the chicken pieces with Cajun seasoning, ensuring they are well-coated.
- Heat olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes. Add garlic and cook for an additional minute until fragrant.
- Stir in the rice and cook for 1-2 minutes, allowing it to toast slightly.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and has absorbed the liquid.
- Once the rice is cooked, stir in the heavy cream and shredded cheddar cheese. Mix until the cheese is melted and the sauce is creamy.
- Add the cooked chicken back to the skillet and stir to combine. Season with salt and pepper to taste.
- Remove from heat, and garnish with chopped parsley before serving.
