A spicy and creamy comfort dish that combines the flavors of Buffalo sauce with chicken and vegetables, baked to perfection.
Ingredients

- 1 tablespoon avocado oil or olive oil
- 3/4 cup buffalo sauce
- 1/3 cup mayo
- 2 whole eggs
- 3 cups fresh cauliflower rice
- 2 medium carrots, diced
- 1 small red bell pepper, diced
- 1 medium yellow onion, diced
- 1 1/2 teaspoon garlic powder
- 1 teaspoon dried parsley
- Dash of salt and black pepper
- 1 1/4 – 1 1/2 lbs chicken breast, cooked and shredded
- Ranch dressing of choice (optional)
- Hot sauce or additional buffalo sauce (optional)
- Sliced green onion (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix the sauce ingredients until smooth.
- In another bowl, combine the filling ingredients, then add the sauce mixture and mix well.
- Transfer to a greased baking dish and spread evenly.
- Bake for 25-30 minutes until bubbly and golden.
