  • 1/3 cup mayo
  • 2 whole eggs
  • 3 cups fresh cauliflower rice
  • 2 medium carrots, diced
  • 1 small red bell pepper, diced
  • 1 medium yellow onion, diced
  • 1 1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Dash of salt and black pepper
  • 1 1/41 1/2 lbs chicken breast, cooked and shredded
  • Ranch dressing of choice (optional)
  • Hot sauce or additional buffalo sauce (optional)
  • Sliced green onion (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix the sauce ingredients until smooth.
  3. In another bowl, combine the filling ingredients, then add the sauce mixture and mix well.
  4. Transfer to a greased baking dish and spread evenly.
  5. Bake for 25-30 minutes until bubbly and golden.
