Creamy Boursin Chicken Bake is a comforting, veggie-packed casserole made with tender shredded chicken, roasted spaghetti squash, cherry tomatoes, and a rich, garlicky cheese sauce.

- 1 large spaghetti squash, roasted and shredded
- 2 cups cooked shredded chicken
- 1 package (5.2 oz) Boursin Garlic & Fine Herbs cheese
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- ¼ cup grated Parmesan cheese (optional)
- 1 teaspoon Italian seasoning
- Pinch of crushed red pepper flakes (optional)
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Slice squash in half, remove seeds, brush with olive oil, season, and roast cut-side down for 35–40 minutes.
- While squash cools, sauté garlic in olive oil. In a bowl, mix shredded chicken, tomatoes, Boursin cheese, sautéed garlic, Italian seasoning, and red pepper flakes.
- Shred the squash and add it to the bowl. Mix well to combine everything evenly.
- Transfer mixture to a greased baking dish, top with Parmesan if using, and bake at 375°F for 15–20 minutes until bubbly.
- Let rest for 5 minutes before serving.
- Scoop into bowls, garnish with herbs, and enjoy warm.
