Ingredients

  • 8 oz pasta (penne or your choice)
  • 1 block feta cheese
  • 2 salmon fillets
  • 1 cup cherry tomatoes
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a baking dish and drizzle a tablespoon of olive oil.
  3. Place the feta block in the center of the dish, surrounded by cherry tomatoes. Drizzle with remaining olive oil, and season with oregano, salt, and pepper.
  4. Bake for about 25 minutes until the feta is golden and soft.
  5. Cook the pasta in salted water according to package instructions until al dente.
  6. Prepare the salmon by seasoning it and searing in a pan for about 3–4 minutes per side.
  7. Add the cooked garlic to the hot tomatoes and feta.
  8. Add the drained pasta into the baking dish, flake the salmon on top, and lightly mix.
  9. Garnish with fresh basil or parsley.
  10. Serve hot and enjoy!
