Ingredients

- 8 oz pasta (penne or your choice)
- 1 block feta cheese
- 2 salmon fillets
- 1 cup cherry tomatoes
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Grease a baking dish and drizzle a tablespoon of olive oil.
- Place the feta block in the center of the dish, surrounded by cherry tomatoes. Drizzle with remaining olive oil, and season with oregano, salt, and pepper.
- Bake for about 25 minutes until the feta is golden and soft.
- Cook the pasta in salted water according to package instructions until al dente.
- Prepare the salmon by seasoning it and searing in a pan for about 3–4 minutes per side.
- Add the cooked garlic to the hot tomatoes and feta.
- Add the drained pasta into the baking dish, flake the salmon on top, and lightly mix.
- Garnish with fresh basil or parsley.
- Serve hot and enjoy!
