Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt. Stir in the orange zest, cranberries, and pecans.
- In another large bowl, beat together butter, sugar, and egg until smooth. Add the orange juice and mix until combined.
- Gradually add the flour mixture to the wet ingredients, stirring until just moistened.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 1 hour or until the loaf springs back when lightly touched and a toothpick inserted comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
