- 1 cup fresh cranberries
- 1/2 cup sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese
- 1/2 cup cream cheese
- 1 tablespoon gelatin
- 2 tablespoons water
Instructions
- In a saucepan, combine the cranberries and sugar, cooking until the cranberries burst, about 5-7 minutes.
- Strain the mixture and set aside to cool.
- In a separate bowl, whip the heavy cream until soft peaks form.
- In another bowl, mix together the mascarpone cheese, cream cheese, vanilla extract, and the cooled cranberry sauce until smooth.
- Gently fold the whipped cream into the cranberry mixture until combined.
- Dissolve the gelatin in water and add it to the mousse mix, blending thoroughly.
- Divide the mousse into clear mini dessert cups and refrigerate until set, about 4 hours.
- Serve chilled, optionally garnished with fresh cranberries or a dollop of whipped cream.
