- 1/2 cup dried cranberries
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped walnuts or pecans
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil

- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Cook orzo pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine cooked orzo, dried cranberries, crumbled goat cheese, chopped nuts, and parsley.
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper.
- Pour dressing over the salad and toss gently to combine.
- Chill for 15–20 minutes before serving.
