Easy Cranberry Baked Chicken Thighs Recipe

- 4–6 bone-in, skin-on chicken thighs (or boneless, skinless if preferred)
- 1 cup cranberry sauce (homemade or store-bought)
- 1/4 cup balsamic vinegar
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- Salt and pepper to taste
- Fresh rosemary (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and dried thyme.
- In a bowl, combine the cranberry sauce, balsamic vinegar, olive oil, and minced garlic. Stir until well mixed.
- Place the seasoned chicken thighs in a baking dish, skin side up.
- Pour the cranberry sauce mixture over the chicken thighs, making sure they are well coated.
- Bake in the preheated oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy.
- If desired, garnish with fresh rosemary before serving.
- Serve the chicken thighs with the cranberry sauce drizzled over the top. This dish pairs well with rice, mashed potatoes, or a fresh salad.
