- 1 cup lump crab meat (fresh or canned)
- 1/2 cup shrimp (peeled, deveined, and chopped)
- 1/4 cup cream cheese (softened)
- 1/4 cup breadcrumbs (preferably seasoned)
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley (chopped, or 1 teaspoon dried)
- 1 teaspoon garlic powder
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 4 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon paprika (for seasoning)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a bowl, combine the lump crab meat, chopped shrimp, cream cheese, breadcrumbs, grated Parmesan cheese, parsley, garlic powder, lemon juice, salt, and pepper. Mix gently until well combined, being careful not to break up the crab meat too much.
- Pat the salmon fillets dry with paper towels. Using a sharp knife, make a slit in the side of each fillet to create a pocket for the stuffing. Be careful not to cut all the way through.
- Rub the outside of the salmon fillets with olive oil and season with paprika, salt, and pepper.
- Carefully stuff each salmon fillet with the crab and shrimp mixture, using your hands or a spoon to pack it in gently.
- If needed, use toothpicks to secure the opening of the fillets to prevent the stuffing from spilling out during cooking.
- Place the stuffed salmon fillets on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature should reach 145°F or 63°C).
- Remove the stuffed salmon from the oven and let it rest for a few minutes. Serve with lemon wedges and garnish with additional parsley if desired.
