Description

Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 cup fresh or canned crab meat (drained and flaked)
  • 2 tablespoons vegetable oil (or sesame oil)
  • 2 large eggs (beaten)
  • 1 cup green onions (chopped, divided)
  • 1/2 cup frozen peas and carrots (thawed)
  • 3 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Lime wedges (for serving)
  • Fresh cilantro (chopped, optional)
  • Additional green onions (sliced, optional)

Instructions

  1. If using leftover rice, break up any clumps and set aside. If using freshly cooked rice, allow it to cool slightly to prevent it from becoming mushy when frying.
  2. Prepare all vegetables and ingredients before starting to cook.
  3. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  4. Add the beaten eggs to the skillet and scramble until just set. Remove the eggs from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of oil.
  6. Add the minced garlic and sauté for about 30 seconds until fragrant.
  7. Add the thawed peas and carrots, along with half of the chopped green onions. Stir-fry for about 2-3 minutes until the vegetables are tender.
  8. Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.
  9. Gently fold in the crab meat and scrambled eggs. Stir to combine.
  10. Drizzle the soy sauce and oyster sauce (if using) over the rice. Stir well to evenly coat the rice and ingredients.
  11. Taste and adjust seasoning with salt and pepper as needed. Continue to stir-fry for another 2-3 minutes until everything is heated through.
  12. Remove from heat and garnish with the remaining green onions and fresh cilantro if desired.
  13. Serve the crab fried rice hot, with lime wedges on the side for squeezing over the top.
