Description
A flavorful crab fried rice dish with fresh ingredients.
Ingredients

- 2 cups cooked jasmine rice (preferably day-old)
- 1 cup fresh or canned crab meat (drained and flaked)
- 2 tablespoons vegetable oil (or sesame oil)
- 2 large eggs (beaten)
- 1 cup green onions (chopped, divided)
- 1/2 cup frozen peas and carrots (thawed)
- 3 cloves garlic (minced)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
- Lime wedges (for serving)
- Fresh cilantro (chopped, optional)
- Additional green onions (sliced, optional)
Instructions
- If using leftover rice, break up any clumps and set aside. If using freshly cooked rice, allow it to cool slightly to prevent it from becoming mushy when frying.
- Prepare all vegetables and ingredients before starting to cook.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the beaten eggs to the skillet and scramble until just set. Remove the eggs from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the thawed peas and carrots, along with half of the chopped green onions. Stir-fry for about 2-3 minutes until the vegetables are tender.
- Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.
- Gently fold in the crab meat and scrambled eggs. Stir to combine.
- Drizzle the soy sauce and oyster sauce (if using) over the rice. Stir well to evenly coat the rice and ingredients.
- Taste and adjust seasoning with salt and pepper as needed. Continue to stir-fry for another 2-3 minutes until everything is heated through.
- Remove from heat and garnish with the remaining green onions and fresh cilantro if desired.
- Serve the crab fried rice hot, with lime wedges on the side for squeezing over the top.
