- 2 lbs beef chuck roast, cut into bite-sized pieces
- 3 carrots, chopped
- 4 Yukon Gold potatoes, diced
- 2 medium onions, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Chop the beef chuck roast into bite-sized pieces and season generously with salt and pepper. Cut the carrots, onions, and potatoes into uniform pieces.
- In a skillet over medium-high heat, heat some oil. Sear the beef pieces until browned on all sides (about five minutes) to enhance flavor.
- Transfer the seared (or raw) beef into your slow cooker. Add chopped carrots, potatoes, onions, and minced garlic.
- In a separate bowl, combine beef broth, Worcestershire sauce, bay leaves, and any additional seasonings you desire. Pour this mixture over the meat and veggies.
- Cover the slow cooker and set it on low heat for about eight hours or high heat for four hours.
- Once cooked to perfection, remove bay leaves before serving. Ladle into bowls and garnish with fresh parsley if desired.
