- 1 lb Ground beef
- 1/2 cup Breadcrumbs
- 1/4 cup Grated Parmesan cheese
- 1 large Egg
- 2 cloves Minced garlic
- 1/2 cup Finely chopped onion
- 2 tbsp Fresh parsley
- 1 tsp Dried Italian seasoning
- 1 tsp Salt
- 1/2 tsp Pepper
- 2 tbsp Olive oil

- 1 14.5 oz can Diced tomatoes
- 4 cups Beef broth
- 1 tsp Dried thyme
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1/2 tsp Pepper
- 2 tbsp Fresh parsley
Instructions
- In a large bowl, gently combine the ground beef, breadcrumbs, Parmesan, egg, minced garlic, chopped onion, parsley, Italian seasoning, salt, and pepper. Shape this mixture into small meatballs, roughly one inch wide, and set them aside.
- Heat olive oil in a large pot over medium heat. Carefully add the meatballs in batches to avoid overcrowding, browning them on all sides for about 5 minutes. Remove and place them on a plate to keep warm.
- In the same pot, add the chopped onion and sauté for 3-4 minutes, until they are softened and golden brown. Stir in the minced garlic and cook for another minute until fragrant.
- Add the carrots, potatoes, green beans, diced tomatoes (with juice), beef broth, thyme, smoked paprika, salt, and pepper into the pot. Gently stir to harmonize the flavors.
- Bring the stew to a boil, then reduce the heat to low. Carefully reintroduce the browned meatballs back into the pot. Cover and let the stew simmer for about 30-40 minutes, until the potatoes and carrots are tender, and the meatballs are fully cooked.
- Taste the stew and adjust salt and pepper as needed. Ladle the stew into bowls, sprinkle fresh parsley on top for garnish, and serve it warm.
Notes
- This stew can be made ahead and reheated.
- You can substitute ground turkey for a leaner option.
