Description

A warm, cheesy, and spicy pull-apart biscuit layered with seasoned chili and creamy queso, perfect for game day or casual gatherings.

  • 1 can (16.3 oz / 462 g) refrigerated buttermilk biscuits
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder (optional)
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 pound (225 g) ground beef or turkey
  • 1/2 cup (120 ml) diced onions
  • 1/2 cup (120 ml) diced bell peppers (red or green)
  • 2 cloves garlic, minced
  • 1 can (14 oz / 400 g) diced tomatoes, drained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup (240 ml) whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup (115 g) sharp cheddar cheese, shredded
  • 1 cup (115 g) queso blanco or Monterey Jack, shredded
  • 1 small jalapeño, seeded and finely chopped (optional)
  • Salt, to taste

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9-inch round baking dish or pie pan.
  2. In a medium skillet over medium heat, cook ground beef or turkey until browned, about 5-7 minutes, breaking it up as it cooks.
  3. Add diced onions, bell peppers, and minced garlic; sauté for 3-4 minutes until softened.
  4. Stir in drained diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Simmer for 5 minutes, then remove from heat.
  5. In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in flour and cook for 1-2 minutes until lightly golden.
  6. Slowly whisk in milk and cook until thickened, about 4-5 minutes. Remove from heat and stir in shredded cheddar and queso blanco until smooth. Add jalapeño and salt to taste.
  7. Open biscuit can and cut each biscuit into quarters.
  8. Layer one-third of biscuit pieces in the baking dish. Spoon one-third of chili over biscuits, then drizzle one-third of queso sauce. Repeat layers two more times, finishing with biscuits on top.
  9. Brush biscuit tops with melted butter mixed with garlic powder and sprinkle chopped cilantro over the top.
  10. Bake for 25-30 minutes until biscuits are golden brown and cooked through.
  11. Let cool for 5 minutes before serving to make pulling apart easier.
  12. Serve warm and enjoy.
