- Salt and pepper, to taste
- 1 bag (32 oz) frozen tater tots
- Optional: chopped parsley or green onions for garnish
Instructions
- Preheat Oven: Heat oven to 375°F (190°C).
- Cook Beef: In a large skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess fat.
- Add Veggies & Seasoning: Stir in corn (and diced tomatoes if using), paprika, chili powder, salt, and pepper. Cook for 3–4 minutes until everything is warmed and blended.
- Layer Casserole: Spread the beef mixture evenly in a casserole dish. Sprinkle shredded cheddar over the top.
- Top with Tots: Arrange frozen tater tots in a single layer over cheese.
- Bake: Place in the oven and bake for 25–30 minutes, or until tater tots are crispy and cheese is bubbly.
- Serve: Let rest a few minutes, then garnish with parsley or green onions if you like.
