Description

Cowboy Butter Steak Broccoli Linguine is a comforting dish with the aroma of sizzling steak and garlic butter.


Ingredients

  • 12 ounces linguine
  • 1 pound sirloin steak, sliced
  • 2 cups broccoli florets
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon fresh parsley, chopped
  • ½ teaspoon fresh thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • ½ cup reserved pasta water

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. During the last two minutes of cooking, add the broccoli florets.
  2. Before draining, reserve about half a cup of pasta water.
  3. Sear the steak: Heat a large skillet over medium-high heat. Add a small amount of butter and place the sliced steak in the pan. Cook for about 2–3 minutes per side until nicely browned. Remove the steak from the skillet and set it aside.
  4. Make the cowboy butter sauce: In the same skillet, reduce the heat to medium. Add the remaining butter and let it melt. Stir in garlic, Dijon mustard, lemon juice, smoked paprika, crushed red pepper flakes, thyme, parsley, salt, and black pepper. Cook for about a minute until fragrant.
  5. Combine everything: Add the drained linguine and broccoli to the skillet. Toss gently to coat the pasta in the cowboy butter sauce. If the sauce seems too thick, add a splash of reserved pasta water.
  6. Add the steak: Return the sliced steak to the pan and toss everything together. Sprinkle Parmesan cheese over the top and stir until the cheese melts slightly.
  7. Serve warm with extra herbs and Parmesan if desired.

Notes

  • Adjust spice level by adding more or less crushed red pepper flakes.
  • Use different vegetables if preferred.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
