Juicy homemade Country Sausage Patties packed with sage, thyme, and warm spices. A quick and flavorful breakfast staple.
Ingredients

- 1 lb ground pork (80/20 blend)
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp ground sage
- 0.5 tsp thyme
- 0.25 tsp crushed red pepper flakes
- Pinch of nutmeg
- 1 tsp brown sugar (optional)
- 1 tsp maple syrup (optional)
Instructions
- Place ground pork in a large bowl. Add salt, pepper, sage, thyme, crushed red pepper, and nutmeg. Mix by hand until just combined — don’t overwork it.
- Divide into 8 equal portions. Roll into balls, then flatten into patties about ½ inch thick.
- Heat a skillet over medium heat. No oil needed — the pork will release its own fat.
- Fry patties 3–4 minutes per side until golden brown and cooked through (160°F internal temperature).
- Drain on paper towels. Serve with eggs, biscuits, or in a sandwich.
