Instructions
- In a mixing bowl, combine the cottage cheese, rolled oats, and eggs. Mix until well combined; the mixture should be somewhat lumpy.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form and edges look set, then flip and cook another 2-3 minutes until golden brown.
- Stack the pancakes on a plate and serve warm with your favorite toppings.
