- 2 cups cooked chicken breast: Shredded or diced.
- 1 cup cottage cheese: Low-fat or full-fat, based on preference.
- 1/2 cup diced celery: For crunch and freshness.
- 1/2 cup diced bell pepper: Any color, for sweetness and color.
- 1/4 cup red onion: Finely chopped, for a bit of bite.
- 1/4 cup Greek yogurt: For creaminess and tang.
- 1 tablespoon Dijon mustard: For flavor.
- Salt and pepper: To taste.
- 1 tablespoon fresh dill or parsley: Chopped, for freshness.
Instructions
- If you don’t have cooked chicken, you can poach, grill, or bake chicken breasts until fully cooked. Allow to cool and then shred or dice.
- Dice the celery, bell pepper, and red onion into small pieces for even distribution in the salad.
- In a large mixing bowl, combine the cooked chicken, cottage cheese, diced celery, diced bell pepper, and red onion.
- Add 1/4 cup of Greek yogurt and 1 tablespoon of Dijon mustard to the mixture.
- Season the salad with salt and pepper to taste.
- Add 1 tablespoon of chopped fresh dill or parsley for a burst of flavor and freshness.
- Gently stir all the ingredients together until well combined. Be careful not to break up the cottage cheese too much.
- Serve the Cottage Cheese Chicken Salad on a bed of greens, in a wrap, or in a sandwich. It can also be enjoyed on its own as a light meal.
