- 1 cup cottage cheese
- 2 eggs
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper.
- Add the cottage cheese and eggs to a blender and blend until smooth.
- In a separate bowl, combine the flour, baking powder, and salt.
- Pour the cottage cheese mixture into the dry ingredients and stir until combined.
- Add the olive oil and mix until you have a smooth batter.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 35–40 minutes, until the top is golden and a toothpick inserted into the center comes out clean.
- Let the bread cool for about 10 minutes before removing it from the pan.
