  • 2 cups Water (for boiling)
  • 1 teaspoon Salt (divided)
  • 2 tablespoons Unsalted Butter (for frying)
  • 1 medium Yellow Onion (diced)
  • 2 cups Corned Beef (finely diced)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Mustard (optional)
  • 1/2 teaspoon Black Pepper (freshly ground)
  • 2 tablespoons Fresh Parsley (for garnish, optional)
  • 2 large Eggs (optional, cooked to preference)

Instructions

  1. Boil diced Yukon Gold potatoes in salted water for 8–10 minutes until slightly tender. Drain and rinse with cold water to stop the cooking process.
  2. In a skillet, melt butter over medium heat and add diced onions. Sauté for about 3-5 minutes, until they become translucent and fragrant.
  3. Add the boiled potatoes, corned beef, minced garlic, ground mustard, black pepper, and the remaining salt to the skillet. Cook for 8–10 minutes, stirring occasionally, until everything is crispy and golden brown.
  4. In a separate pan, cook your eggs to your liking (fried or poached) and place them on top of the hash. For a fresh touch, garnish with fresh parsley if desired.
  5. Top with hot sauce for an extra kick if desired.
